Silicone is much heavier than plastic and much less flexible. Therefore, removing the air from the silicone bag can be tricky. It can be done by squeezing the bag with a clip attached or by using the fork tool. Typically it is not possible to completely remove the air out of the silicone bag. However, it will not cause any issues because the bag will not float due to its heaviness and the bag will absorb the expansion of a small amount of air left inside.
Another difference between silicone and plastic is that silicone is a heat conductor (the material itself will absorb heat) while plastic is an insulator that does not absorb heat. This characteristic of silicone promotes even heat distribution inside of the bag.
Large silicone bags cannot be used with the commercial sealers for sous vide for a simple reason: silicone (unlike plastic) is exceptionally resistant to heat and it can withstand temperatures up to 428 F (220 C). Plastic melts at about half of that. Sous vide sealers do not generate the temperature high enough for melting of silicone.
It’s too easy to continue using plastic bags. It’s too easy to throw them into the garbage where they end up in landfills. Every year around 500 billion plastic bags are used worldwide. They are difficult and costly to recycle and most end up on landfill sites where they take around 300 years to photodegrade.

Plastic bags release harmful chemicals (carcinogens and endocrine disruptors) into the environment that end up poisoning us. They pose danger to sea life. Animals mistake plastic bags for food, which clogs their intestines and leads to slow starvation. Others become entangled in plastic bags and drown. We need to change!
